Overwhelmingly simple but good

When I presented this quiche to my husband, he said, “Oh, when you said we were having onion quiche for dinner, you literally meant just onion quiche.” It made laugh because it was true.

This was just an onion quiche, nothing more, nothing less. Despite how overwhelmingly simple it sounds, it was still pretty good. Though, I do LOVE onions.

Onion Quiche: Questions

✽ What is a quiche?

A quiche is a French tart that consists of a pie crust filled with custard. As for flavorings, there are so many options including bacon, vegetables, cheese, crab, and mushrooms. One of the most famous French quiches is the Quiche Lorraine which conists of bacon, eggs, cream, seasonings, and butter inside of a pie crust.

Quiche is the perfect dish to be served at a breakfast, brunch, or lunch get-together!

✽ How do you caramelize onions?

The key to perfectly caramelized onions is not rushing it. The onions are to be cooked over low heat, stirring occasionally. Eventually the onions will turn a golden brown color and smell amazing. It will take about an hour (or even longer sometimes) before the onions are fully caramelized. Trust me, it's worth the wait!

It is also helpful to use a large saucepan so the onions are not crowded. If the pan is too crowded, the onions will steam instead of brown (been there, done that..).

Another tip I learned from Julia Child is to caramelize the onions in both oil and butter. Butter is delicious, but it is quick to burn. The oil raises the smoking point, but you still get the butter flavor.

The onions are to be cooked over low heat, stirring occasionally.

Looking back at this blog post a couple years later, I realize I should've cooked my onions longer and let them get darker. After successfully making caramelized onions numerous times now, I understand I was missing out on some flavor here! Now, I make sure I follow the above tips for perfect caramelized onions every time!

How to Make Onion Quiche

✽ Step 1: Make Pastry Crust

Just like the other quiches, the most intensive part is the recipe is the making of the quiche crust. It needs to be cold when you roll it out so it does need to hang out in the fridge/freezer for a while. The homemade crust is so worth it and improves the taste of these quiches!

✽ Step 2: Cook Onions

To begin, minced onions are cooked slowly in butter and oil for about an hour. Slow and steady wins the race here. The onions will be very tender and turn a golden yellow color.

Edit- Looking back, I realize that my onions for this quiche were not completely caramelized. They should have cooked longer, and they should be a darker color. Cooking the onions longer probably would've this quiche more complexity and flavor!

✽ Step 3: Add Flour

The cooked onions are sprinkled with a little flour to thicken it up. The onions are cooked for a few more minutes.

✽ Step 4: Whisk Together Filling & Bake

Eggs are mixed with some heavy cream and seasonings. Secret ingredient- nutmeg. Nutmeg will help bring out the flavor of the onions. Mix in the onions and some Swiss cheese.

Julia Child's Quiche aux Oignons

Pour into your partially baked pastry shell and top with more Swiss cheese and dots of butter. This quiche is baked in the oven for about half an hour.

Overall, if you are looking for one quiche recipe to make, I’d choose a different one- unless you just REALLY love onions. The quiche was good. We ended up eating it all, but it was basically eating a bunch of onions inside of a pie crust. Which for somebody like me who loves onions, wasn't a bad thing.
