What an adventure this was!

First, I had it all planned out to make scallops this week. When I opened up the scallops, they had gone bad. So off to plan B!

I flipped through all the upcoming recipes and searched for ones that I had all the ingredients on hand. This led me to making mayo in the electric blender or food processor. Simple enough.

I gathered all my ingredients and supplies to begin filming. The next few moments went by so fast that I'm not even sure what exactly happened. All I know is there was a huge crash.

There was a completely shattered 2-cup glass measuring cup, a shattered glass mixing bowl, 3 eggs, some seasoning, and TWO CUPS of oil on my dining room floor. Alllll over my dining room floor.

Have you ever cleaned up 2 cups of oil with glass shatters mixed in it before?? It's terrible. It took me two hours to clean up and now all my cleaning supplies are oily. But hey, at least my dining room floor is clean and perfectly oiled.

OH! But then when I was putting my jar of mayonnaise into the fridge, it slipped right out of my hand and exploded on my kitchen floor. Womp Womp. I'm hoping for better luck this week.

People are always saying how much better homemade mayo is over store bought. I get it to an extent. I'm not sure I can say that the taste is A LOT better because it's such a very different taste. I will say though, if I could have freshly made mayonnaise in my fridge at all times, I probably would reach for the homemade version over the store bought one.

That leads me into Julia's recipe where she walks you through making the mayonnaise in a food processor- a very easy process. She also talks a little bit about making the mayo in an electric blender but says that the food processor mayo will be a much better quality.

How to Make Mayonnaise in a Food Processor

Homemade Mayonnaise Julia Child

✽ Step 1: Process Eggs

The first step is to process 1 egg and 2 yolks together for one minute. Dry mustard, salt, and lemon juice are added in while the processor is still running.

✽ Step 2: Add Oil

Half of the oil is added into the mixture in a stream of droplets. The mixture will begin to get really thick. It's pretty fun to watch! Emulsions are so cool!

Homemade Mayo Julia Child

It's thinned out a little bit with some more lemon juice, and the rest of the oil is added.

The last thing to do is season with salt, pepper, and a little more lemon juice.
